Manager and Sommelier, Sheila Person's extensive wine list is an oenophile's dream, featuring an impressive selection of boutique and hard-to-find varietals alongside a collection of cutting-edge 'cult' wines and classics.
 
Eight's unparalleled wine-by-the-glass program is one of the most comprehensive in the city and uniquely offers guests a choice of 3oz., 5oz., and 8oz. pours to encourage sampling and exploration of the vast wine list, which rotates bi-weekly to introduce new arrivals.

Executive Chef, Shane Straiko showcases the best available local ingredients in a variety of sociable 'sharing-size' dishes, as well as an extensive selection of cheeses and charcuterie specifically chosen for their compatibility with the wines on offer.
